This Phaidon publication is one in which 20 leading chefs from across the globe select 5 emerging chefs each. These emerging chefs are then showcased with a biographical entry, a photograph of some of the food that they cook and a couple of their own recipes. The precedent for this book was another Phaidon title, Coco,  which was published in 2009 and highlighted talent in the international restaurant world. Some of the relatively unknown names in that book are now the leading chefs in this one.

Today's Special  is therefore a who's who of who's next in the global dining world. It is a fascinating insight into the range of culinary creatives working today. Among the chef selectors are Skye Gyngell, Margot Henderson and Yotam Ottolenghi and among the recipes that the book contains are ones for sugar 'crust' slow-cooked pineapple, cabbage reblochon, peas with fresh cheese and verbena and one for passion fruit tart.
