Forage - Liz Knight
Liz Knight is a 'wild chef' who lives and works in The Marches. This book, with its illustrations by Rachel Pedder-Smith, is a guide to wild plants that can be gathered, cooked and eaten. Each plant that Knight lists is split into a category depending on its growth habit - trees, shrubs and climbers, perennials etc. - and each plant is then given a separate listing within that category. As well as a brief description of the plant and where it grows the listing details the parts of the plant that are edible and when the gathering season for it is. On the subsequent pages there are then recipes and suggestions for how you can incorporate that foraged plant in your cooking.
Sometime it is also necessary for Knight to instruct us how to collect the edible part of the plant, hence in the section on birch there are instructions for how to tap the birch tree in order to obtain the sap - which you can then use like maple syrup.
While tapping birch sap might be considered advanced foraging there is much in this book that is genuinely useful such as how to identify horseradish and how you can use dandelion leaves.
