Tomatoes are a kitchen essential in our house. I get slightly panicky if there isn't a tin of tomatoes in the cupboard, a tube of paste in the fridge or the prospect (at least) of a punnet of fresh tomatoes. Of course there are tomatoes and there are tomatoes - and few things can rival a perfect tomato at the height of summer . . . particularly if you are in Italy, by the side of a pool, with some buffalo mozzarella, basil and a pinch of salt!

Aside from that rare perfect sequence they are versatile and can be both the star element or play an essential supportive role. Claire Thomson's book celebrates this versatile ingredient. She showcases them in this book in everything from sides and sauces - there is a recipe for roasted tomato aioli and also several for variations on a tomato salad - but there are also recipes for tomato and saffron arancini, trapanese sauce and roasted tomato falafels. Claire's writing and the very lovely food photography by Sam Folan make all of these look and sound inviting and delicious.
