1. Peel and chop the potatoes and onions into medium sized dice. Add a pinch of salt.
2. Fry the potatoes and the onions at medium/low heat for 20/25 minutes.
3. Drain the potatoes and the onions.
4. Beat the 6 eggs in a big bowl 5. Add potatoes and onion and
stir. Let stand for 5 minutes.
6. Add a spoon of olive oil to the frying pan. Turn up to full heat. When hot, add the egg, potato and onion mixture.
7. Turn down to a low heat and cook for ten minutes.
8. Flip the tortilla, using a plate larger than your frying pan to help.
9. Fry for a further 10 minutes until gently cooked through. Enjoy!
