By extracting the ethereal oils from the grapefruit zest, we end up with a concentrated grapefruit oil that is rich in acidity and sweetness as well as the discrete bitterness characterised by the fruit.
We use fresh, young ginger tubers which we dry and blend. In the drying process, the gingerol is transformed to shogaol which intensifies the sharp, spicy flavour.
