The Karatzova peppers used for these smoked chili flakes are grown today by just a handful of families living on the northern border of Almopia. Once ripe, these slightly spicy, meaty peppers are washed, hand-picked, placed on birch wood, and slowly smoked for 10 days. During the smoking process, farmers work in shifts watching the fire day and night, making sure it never goes out. The peppers are then destemmed and crushed by hand, giving life to a condiment known collectively in Greece as Bukovo.
